After 19 years in the ageing, this is a truly fantastic toast to traditional rum production methods. The Bellevue Distillery also claims the title as the Caribbean's first distillery to boast a 100% non-polluting process. There's no monkey business when it comes to this batch but, there are plenty of banana notes and other tropical fruits for a deliciously sweet finish.
Nose: Big ripe banana notes with a vegetal green freshness too. An earthiness combines with milk chocolate to bring a complexity.
Palate: Ginger and cinnamon spice build on notes of freshly cut grass. Then there’s a huge haul of baked pineapple, papaya and banana notes.
Finish: Long and warming, with that cooked fruit turning increasingly roasted.
